  • 400 grams peeled tomatoes (canned)
  • 300 grams pasta (gnochetti sardi, may substitute orecchiette or cavatelli pasta)
  • 200 grams sausage
  • 200 grams red wine
  • 150 grams onion (chopped)
  • extra-virgin olive oil
  • salt

    Directions

    1. Remove the casing from the sausage, break it up into small pieces, saute it for 2 minutes and remove the fatty juices from the pan. Add 1 tablespoon of oil and the onion to the pan, then add the sausage and the wine. Allow the wine to evaporate for 1 minute on high heat.
    2. Drain the liquid from the tomatoes and add them to the sausage and continue cooking for 10 minutes.
    3. Cook the pasta for 10 minutes in boiling salted water, drain it, and add the sauce with the sausage.
    4. Serve very hot and sprinkled with parmesan cheese.
