  • 3 packages graham crackers (roughly broken up)
  • 20 tablespoons unsalted butter (melted)
  • 1/2 teaspoon fine salt
  • 7 ounces bittersweet chocolate (finely chopped)
  • 1 cup heavy cream
  • 1 large egg (at room temperature for 30 mins)
  • 1 teaspoon unflavored gelatin
  • 1/2 cup cold water
  • 3/4 cup sugar
  • 1/4 cup light corn syrup
  • 1/2 teaspoon vanilla
  • vegetable oil (for greasing)

    Directions

    1. Preheat oven to 350 degrees
    2. Put the graham crackers into a food processor and pulse until the crackers break down to the consistency of sand. Transfer to a large bowl. Stir in the salt and melted butter and mix until the butter has thoroughly incorporated; it should be the consistency of wet sand.
    3. Press and pack the wet graham mixture into pie plate. Bake for 15-18 minutes.
