Veggies were tasty- I need to use less oil Next time. They were a little too soft

Very simple to make and extremely flavorful. The only modification I made was after 20 minutes of roasting, I turned in the broiler because I wanted to brown them a little more.

Delicious but don't cook for more than 20mins it will get over cooked. Temperature of the oven can also be a lil lower
