- 3 1/2 lb. beets (assorted small, trimmed and cleaned)
- 3 red onions (small, each cut into 8 wedges)
- 1 Tbsp. olive oil
- 1 1/2 tsp. rosemary (McCormick Gourmet™ Organic, Crushed)
- 1 1/2 tsp. thyme (McCormick Gourmet™ Organic)
- 1/2 tsp. sea salt (McCormick Gourmet™ Sicilian)
- 2 Tbsp. balsamic vinegar

Directions
- Preheat oven to 425°F. Wrap 3 beets at a time in foil. Place in shallow baking pan
- Roast 1 hour or until beets are tender when pierced with small knife. Cool until able to handle. Peel then quarter beets. Toss beets, onions, oil, rosemary, thyme and sea salt in same baking pan
- Roast 35 to 45 minutes or until onions are tender. Drizzle balsamic vinegar over vegetables. Roast 5 minutes longer or until vinegar is the consistency of syrup. Gently toss vegetables before serving

Delicious! Added a few carrots to the mix and sprinkled with goat cheese just before serving. I will definitely make this again.

i’ve re-made this multiple times, honestly one of my favorite ways to prepare beets!

Found this to be a little bland. If I make it again, will add different seasonings and maybe a little more balsamic, less oil.
