With spiced ground chicken, hearty black beans, and tons of toppings, these homemade nachos are sure to make your mouth water!

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • black pepper
  • 15 ounces black beans (drained and rinsed)
  • 16 ounces corn tortilla chips
  • 1 pound shredded Mexican cheese blend (shredded)
  • 2 tomatoes (large)
  • 1/4 red onion
  • 1 jalapeno chilies (small)
  • 1/4 cup cilantro leaves (fresh)
  • 1 avocado
  • 2 tablespoons sliced black olives
  • 1/2 lime
  • 1/3 cup sour cream

    Directions

    1. Preheat the oven to 400° F.
    2. Line a large baking sheet with parchment paper.
    3. Drizzle the olive oil into a large skillet set over medium-high heat. Once the oil is shimmering, add the chicken. Cook for 5-6 minutes, breaking up the chicken with a rubber spatula as it cooks. Add the spices, salt, and black pepper, to taste. Stir evenly distribute the spices. Add the black beans to the skillet and continue to cook 1-2 minutes more, stirring frequently, until the chicken is cooked through.

    Perfecto!! Since my daughter does not like beans eliminated them. I did find that I needed some moisture to get the spices mixed in so I added a little splash of my margarita (heeheehee) and it blended nicely. We used purchased guacamole and a jar of jalapeños rather than cutting them fresh. It was a quick and easy meal to prepare. You could easily substitute packaged taco seasoning if you don’t have all the other spices on hand.

    Make sure to chop your veggies before putting the nachos in the oven, I found that the bake time didn't really allow me to get them all chopped before the nachos were ready to come out. Also, you could probably get away with half as many chips.

    Very tasty. I used ground beef instead along with more garlic and chili powder that was indicated in the recipe. I also added red pepper seasoning. Definitely making this again!

    Really good! I didn’t have everything and used ground beef instead. Didn’t add tomatoes, sour cream and made guacamole to add to top. Would definitely make this again!

    I substituted ground beef for chicken as that's what I had on hand, and used half the salt. But the spices and and fresh toppings made it delicious! A new favorite with either chicken or beef!

    We loved it! It definitely took longer than I expected to make, but it was worth it because we ended up with such a fun meal. It's always nice when my 4-yr-old daughter eats her dinner, and she did tonight! Be warned, you will have a ton of food. We're a family of three, and we have at least 2/3 of the tray left over. Hoping it keeps OK for lunch tomorrow!

    Delicious- it was a hit with my family! I would make this again but perhaps using taco seasoning instead of the mix of spices.
