  • 130 milliliters vegetable broth
  • 1 red onion
  • 1 egg yolk
  • 125 grams gorgonzola cheese
  • 2 tablespoons port wine
  • salt

    Directions

    1. Add the vegetable broth to a saucepan set to medium heat. Add the onion and cook in the broth for approximately 10 minutes on medium heat. Remove from the heat and allow to cool slightly.
    2. Add the onions and broth to a blender and puree until smooth.
    3. In a bowl, combine the cheese and egg yolk until creamy. Add the wine and season with a pinch of salt.
    4. Add the cheese mixture to the onion sauce in the saucepan. Bring it to a boil and cook for a few minutes.
    5. Use this sauce with chicken or other meat dishes.
