  • 1 yellow onion (medium, chopped)
  • 1/2 green bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 1 lb. smoked kielbasa (cut into 1/2″ coins)
  • 1 shank (smoked ham)
  • 1 bay leaf
  • celery salt
  • black pepper
  • cayenne pepper (to taste, I used 1/2 teaspoon)
  • 1 tsp. sweet paprika
  • 1/4 tsp. smoked paprika
  • 1 tsp. oregano
  • 1 tsp. thyme
  • 5 dashes liquid smoke (optional)
  • 2 tsp. worcestershire sauce
  • 4 cups chicken broth (+ water to cover)
  • 2 scallions (chopped for garnish, optional)
