  • 2 sprigs rosemary
  • 4 cloves garlic
  • 1/4 cup extra-virgin olive oil (+ 1 T)
  • 3 tablespoons dijon mustard

    Directions

    1. 1. Marinate rack of lamb with rosemary, garlic cloves, and 1/4 c olive oil in a ziplock bag or in a shallow dish for at least 1 hr (up to overnight).
    2. 2. Remove lamb from marinade discarding rosemary and garlic. Wipe off excess oil. Season lamb liberally with salt and pepper.
    3. 3. Preheat oven to 350 degrees Fahrenheit
