  • 2 peppers (– sliced)
  • 2 cloves garlic (– crushed & chopped)
  • 1/2 cup parsley (– chopped)
  • 1 onion (– sliced)
  • 1/2 cup olives (– chopped)
  • 1 tablespoon capers
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • olive oil (for drizzling)
  • 2 eggs (plus 1 tbs. water – beaten)

    Directions

    1. On a heated griddle, drizzle a little olive oil. Place all of the veggies and let char a little.
    2. In a heated frying pan place a drizzle of olive oil and pour in the beaten eggs. Let the eggs become firm enough to flip gently, and then plate. Sprinkle a little shredded mozzarella, veggies and then fold over.
