  • 1 cup plain yogurt (light)
  • 1 1/4 cups pumpkin (mashed or pumpkin puree)
  • 1 1/2 cups molasses
  • 1/2 tablespoon ginger (ground)
  • 1 tablespoon vanilla extract

    Directions

    1. Strain the yogurt by placing a coffee filter onto a strainer and pouring the yogurt into it. Let the yogurt strain for 3 to 4 hours. Once the liquid has been strained from the yogurt, you will have a thicker consistency.
    2. Mix the pumpkin, brown sugar, ginger, vanilla, and a pinch of nutmeg with the yogurt. Make sure to taste the mixture in order to see if more sugar is needed.
    3. Pour the mixture into Popsicle molds and place them into the freezer for at least 6 hours.
