  • 375 grams pumpkin puree (made from pumpkin, skinned and cut into chunks and roasted until tender, then whizzed with a blender or processor or pressed through a sieve)
  • 5 grams yeast (easy bake, or 15g fresh yeast)
  • 10 grams fine sea salt
  • 300 grams strong flour (white)
  • 150 grams water (see above for note on the amount of water needed, I use cold water and allow more time for my loaf to do its first rise, this improves the flavour)
