  • 55 grams Bertolli 59% vegetable fat spread
  • 1 onion (peeled and sliced)
  • 115 grams carrots (peeled and sliced)
  • 2 sticks celery (washed and chopped)
  • 1 clove garlic (peeled and crushed)
  • 1 teaspoon herbes de provence
  • 400 grams mixed beans
  • 400 grams chopped tomatoes
  • salt
  • 1 tablespoon olive (paste)

    Directions

    1. Melt Bertolli in large pan and sauté onion, carrots, celery, garlic and herbs over gentle heat for about 5 minutes or until soft.
    2. Add remaining ingredients and season well with salt and pepper.
    3. Bring to the boil, cover and simmer for 15-20 minutes.
    4. Serve recipe with garlic bread.
