  • 4 pomelo (segments of)
  • 1/2 piece chicken breast (steamed and shred thinly)
  • 12 pieces prawns (large, steamed and shelled)
  • 2 limes (and juice from 3)
  • 2 teaspoons caster sugar
  • 1 red chilli (chopped, can sub with chilli padi)
  • 1 stalk lemongrass (finely sliced)
  • 1 stalk bunga kantan (finely sliced, Torch Ginger Flower)
  • 3 fish sauce

    Directions

    1. Mix chicken and prawns into the pomelo and cool in the fridge.
    2. Pour the dressing (remember to adjust the fish sauce, sugar and lime juice according to your taste) into the pomelo mixture.
    3. Sprinkle in chopped spring onion and mix well.
