  • 150 grams potatoes (peeled and ct)
  • salt and ground black pepper
  • 25 grams butter
  • 200 milliliters vegetable broth
  • 100 milliliters cream
  • 100 grams mushrooms (diced)
  • 1 onion (minced)
  • 1 olive oil (generous tbsp.)
  • nutmeg
  • 1 fresh thyme (generous tbsp. plus additional)

    Directions

    1. Boil the potatoes in water with a pinch of salt for 15 minutes, until tender. Mash and add the butter.
    2. Heat the broth and add to the potatoes.
    3. Saute the mushrooms and onion in a little olive oil in a skillet. Add to the potato mixture, reserving a few of the mushrooms. Season with salt, pepper, nutmeg, and thyme.
    4. Ladle the soup into serving bowls and garnish with the reserved mushrooms and additional thyme.
