  • 1 lb. sweet potatoes (peeled and cut into chips)
  • 2 Tbsp. vegetable oil
  • 3 oz. bread (slightly stale)
  • 4 Tbsp. chopped parsley (fresh)
  • 6 oz. cod fillets
  • 1 lemon
  • 1 Tbsp. plain flour
  • 1 medium eggs (beaten)
  • 8 oz. frozen peas
  • 1.5 oz. Flora pro.activ (1½oz)
  • 1 Tbsp. capers (chopped, optional)
  • 1 Tbsp. mint leaves (fresh, chopped)
  • 1 1/2 Tbsp. low-fat natural yogurt

    Directions

    1. Preheat oven to 200ºC (fan oven 180ºC)/gas mark 6.
    2. Toss the chips in half the oil and spread evenly over a baking sheet. Bake in the oven for 40 minutes.
    3. Meanwhile prepare the fish by placing the bread, half the parsley and lemon zest in a food processor and blitz until like rough breadcrumbs.
