  • 3 tablespoons olive oil
  • 1 yellow onion (large, sliced)
  • 3 shallots
  • 1/8 teaspoon spices ("Escoffier's, ", posted on food52 or white curry spice mixture, see below)
  • 6 tablespoons tawny port (divided, see below)
  • 1 tablespoon butter
  • 2 1/2 teaspoons flour (Wondra is best)
  • 3/4 cup chicken stock (warmed)
  • salt
  • grapeseed oil (for pan frying the chops)
  • 2 pork chops
  • 3/8 cup creme fraiche
  • tarragon vinegar (splash of)
  • curry (for the white, spice mixture:)
  • 1 teaspoon coriander seeds (each whole, and cumin seeds)
  • 1 cinnamon stick (very small)
  • 3 whole cloves
  • 1 teaspoon yellow mustard seeds
  • 1/4 teaspoon cardamom seeds
  • 1/4 teaspoon black peppercorns
