  • 2 tablespoons Crisco Pure Vegetable Oil
  • 1 cup chopped onion
  • 1 cup green pepper (chopped)
  • 2 cloves garlic (minced)
  • 1 pound lean ground beef
  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon pepper
  • 2 Roma tomatoes (peeled, seeded and chopped)
  • 1/2 cup pimiento stuffed green olives (sliced)
  • 1/4 cup golden raisins
  • 2 tablespoons flat leaf parsley (chopped)
  • 6 flour tortillas (8-inch)
  • 1 cup manchego cheese (shredded)
  • 1/2 cup sour cream

    Directions

    1. HEAT oil in large skillet over medium heat. Add onion, green pepper and garlic; saute 5 minutes. Add crumbled ground beef; cook about 10 minutes or until thoroughly cooked and crumbled.
    2. STIR in tomato paste, cumin, salt, cinnamon and pepper; cook 5 minutes. Add tomatoes, olives, raisins and parsley; cook 5 minutes. Adjust seasonings if necessary.
    3. HEAT tortillas, one at a time, in large dry skillet over medium heat, turning once. Place tortillas on serving plates. Top evenly with beef mixture. Sprinkle with cheese. Garnish with sour cream. Fold tortilla to form taco.
