  • 1 courgette (cut into chunks)
  • 1 pepper (any colour, diced)
  • 1 red onion (small, cut into wedges)
  • 1 teaspoon Flora Cuisine
  • 15 grams Flora Light (½oz)
  • 40 grams goats cheese (sliced thinly)
  • 1 tablespoon extra light mayonnaise (Hellmann’s, mixed with)
  • 1 teaspoon pesto (verde)
  • 2 grain (mixed, and seeded bagels)

    Directions

    1. Place courgette, peppers and onion on a baking tray, toss in Flora Cuisine and roast in hot oven 200°C, 180°C fan oven, gas mark 6 for 20 minutes, stirring once or twice. Cool.
    2. Spread halved bagels with Flora and top with the pesto mayo mix, veggies and goats' cheese. Sandwich together and enjoy!
