  • 120 milliliters apple cider vinegar
  • 1 red onion (sliced very finely)
  • 120 milliliters peanut butter (I used this brand)
  • 2 tablespoons soy sauce (or tamari, for GF version + more to season tofu)
  • 3 tablespoons rice wine vinegar (or lime juice)
  • 2 tablespoons mirin (or maple syrup, adjust to taste)
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons sambal oelek (or other chilli sauce, adjust to taste)
  • 2 teaspoons ginger (finely grated, adjust to taste)
  • 800 grams cotton tofu (firm, *, pressed, I use this tofu press)
  • 1 tablespoon neutral oil
  • 4 burger buns (GF if needed)
  • 1 avocado (ripe, sliced)
  • 8 lettuce leaves (small)
  • 1/2 cucumber (shaved with a speed peeler)
  • fresh coriander
  • black sesame seeds (to garnish, optional)
