- Mix together the peaches, corn, tomatoes, red bell pepper, poblano pepper, green onions and cilantro. Season with salt and pepper to taste. In a separate bowl, make the dressing by whisking together the honey, lime juice, balsamic vinegar and salt and pepper. Stir in minced mint and taste for seasoning. Pour the dressing over the salsa right before serving. Serve with fish or pork as a relish.
