  • 1 cup peaches (small diced – fresh or frozen, if fresh-blanch peaches to remove skin)
  • 1/2 cup fresh corn (or frozen, – sautéed in pan to caramelize-set aside to cool)
  • 1/2 cup grape tomatoes (quartered)
  • 1/2 red bell pepper (chopped medium)
  • 1/2 roasted poblano pepper (chopped small)
  • 2 green onions (– sliced thin)
  • 2 tablespoons chopped cilantro
  • 1 tablespoon honey
  • 1 tablespoon lime juice (Fresh Squeezed, 1- lime)
  • 1/2 teaspoon balsamic vinegar
  • 1 tablespoon fresh mint (minced)

    Directions

    1. Mix together the peaches, corn, tomatoes, red bell pepper, poblano pepper, green onions and cilantro. Season with salt and pepper to taste. In a separate bowl, make the dressing by whisking together the honey, lime juice, balsamic vinegar and salt and pepper. Stir in minced mint and taste for seasoning. Pour the dressing over the salsa right before serving. Serve with fish or pork as a relish.
