  • 1/4 cup brummel & brown spread
  • 2 tablespoons loosely packed fresh basil leaves
  • 1 tablespoon lemon juice
  • 6 cups vegetables (assorted sliced, onion, red or green bell peppers, mushrooms, zucchini, yellow squash or eggplant)
  • 8 ounces farfalle (penne or ziti pasta, cooked and drained)

    Directions

    1. Preheat oven to 450°.
    2. Blend 1/4 cup Brummel & Brown® Spread, herbs and lemon juice in small bowl; reserve. Toss vegetables with remaining Spread. Arrange vegetables in broiler pan without rack. Roast, stirring once, 20 minutes or until vegetables are tender.
    3. Toss vegetables with hot pasta and reserved spread mixture. Season with salt and pepper. Sprinkle, if desired, with grated Parmesan cheese.
