  • unsalted butter (softened, for pan; or use coconut oil)
  • 3 cups almond flour
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground ginger
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 15 medjool date (15 dates are 9 ounces)
  • 1 tablespoon orange zest (finely grated; 1 orange is about 1 Tbsp. zest)
  • 1/2 cup honey
  • 6 large eggs
  • 1 cup unsalted butter (melted and cooled, for cake)

    Directions

    1. Preheat oven to 350°F. Brush or rub inside of a 10-12-cup Bundt pan with softened butter.
    2. Put almond flour, cinnamon, ginger, salt, and baking powder in a large bowl and whisk together.
    3. Pit dates. Put dates, orange zest, honey, and eggs in a blender and process until smooth. Scrape insides of container. Open top of blender lid and with motor running, gradually add melted butter. Process until well blended, thick, and pale, 1-2 minutes.
