  • 1 tablespoon salt
  • 1 1/2 tablespoons garlic powder
  • 1/2 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1/2 tablespoon cayenne pepper
  • 1/2 tablespoon dried thyme
  • 1/2 tablespoon dried oregano
  • 5 pounds pork ribs (/ 2.5 kg, American style, cut into individual ribs, to fit into one baking dish)
  • 1 bottle dark beer (About 12 oz / 375 ml. Stout, porter or a dark ale)
  • 14 ounces crushed tomato (/ 400g can)
  • 3.5 ounces chipotle (/ 100g can,in Adobo Sauce, chipotle and sauce, 1/2 a standard can, Note 1)
  • 1 onion (large, brown, white or yellow, diced)
  • 2 garlic cloves (minced)
  • 1 tablespoon tomato paste
  • 2 tablespoons brown sugar
  • 1/4 cup white wine vinegar (or 2 tbsp normal white vinegar + 1 tsp sugar)
  • 1/3 cup worcestershire sauce
  • 2 tablespoons Tabasco Sauce (or other hot sauce. Adjust to taste.)
  • 1/2 tablespoon salt

    We loved this recipe, had to make a couple of substitutions (hard cider, rather than beer, habanero chille sauce rather than chipotle, Heinz pepper sauce rather than Lee and Perrins). I only had 1 kilo of ribs(we were 2) and lots of extra sauce, so much so that 16 minutes before the end of 2nd bake time, i drained nearly all of the sauce into a casserole and left it to try and cook down the extra liquid. Bottled for another set of ribs! I appreciated the care you put into finding the perfect recipe.

    Didn't make the BBQ sauce, but I corrected a 'KC Masterpiece" with chipotle paste, mustard and a splash of red wine. I totally followed the rub. Cooked for 2h wrapped in foil at 150C and basted with sauce each hour, cooking unwrapped for 15 min. Great flavour, loved the rub and the chipotle smoke.
