  • 1/4 cup peanut butter
  • 1/4 cup soy sauce (60 ml/2 fl. ounces)
  • 1/4 cup coconut milk (60ml/2 fl. ounces)
  • 1/4 cup chicken stock
  • 2 Tbsp. corn flour
  • 3 cloves garlic (crushed)
  • fresh ginger (large thumb-width piece, at least of, peeled & grated, I added a bit more than this!)
  • 2 Tbsp. honey
  • 2 Tbsp. rice wine vinegar (I used Japanese mirin, but Chinese is fine, too)
  • 2 red chilis (small)
  • 700 grams chicken thighs (I used 10 smallish ones)
  • 3 spring onions (chopped finely)
  • 1 handful peanuts (salted is fine, crushed in a food processor or bashed with a rolling pin in a plastic bag)
  • 1 red chili (more, chopped finely)
  • lime wedges

    This was so yummy. I put it over quinoa. Bowl-licking good!!

    Amazingly tasty! I used 40 ml fish sauce, 20ml soy sauce instead of all soy as i love that Thai flavour. Will definitely make this again!
