It's delicious! I think it would be even better if you cooked it low and slow like at 225 on a smoker if possible. I would also make more sauce to pour over the cut meat at serving.

Delicious! Quick, easy, autumn festive dish. My apples did come out like unformed mush unlike the advertised photo of the finished dish, I may have sliced them too thin; but tasted phenomenal all the same.

I'll definitely make this again! It is so simple and tasty - the pork seemed to absorb the maple/dijon taste all the way through, and the fruits and veggies became soft and flavourful. Low calories too!

It was a great dinner. I used cauliflower and broccoli as veggie because I didn’t have green beans! It was tasty and the pork was very moist! I will make it again. I think I will try butternut squash as the veggie. That will be nice as autumn arrives!

Yummy. I doubled the recipe to feed 7 people. We loved the flavor the Maple-Dijon gave the beans and apples as well as the Pork. Baking 2 pork loins, I did increase the time so the pork was about 165° internally. The beans still had a nice snap to them. I will use this recipe again. Simple and tasty.
