  • 1 tablespoon olive oil
  • 1/4 onion (peeled and minced)
  • 1 tomato (diced)
  • 1/4 cup mushrooms (cleaned and sliced)
  • 1 poblano pepper (roasted, peeled, seeded, and cut into strips)
  • 5 epazote (leaves, chopped)
  • salt
  • ground black pepper
  • flour tortillas
  • cheese (shredded)

    Directions

    1. Pour the olive oil into a hot pan and then add the onions and tomatoes. Saute for about 5 minutes.
    2. Add the sliced mushrooms and saute for another 5 minutes. Add the poblano pepper and epazote leaves.
    3. Mix everything well and cook for 3 minutes. Add a pinch of salt and black pepper.
    4. Top half of a flour tortilla with the mixture and add shredded cheese on top. Close the tortilla and serve.
