Mulligatawny - Quick, Curried Soup Using Trader Joe's Ingredients



  • 1 cup mirepoix
  • 1 tablespoon olive oil
  • 1 boneless chicken breast (diced)
  • 1 cup unsweetened applesauce
  • 15 ounces masala (Trader Joe's, Simmer Sauce)
  • 14 1/2 ounces diced tomatoes (with no salt added)
  • 1/2 cup plain yogurt (such as Trader Joe's Plain Cream Line Yogurt)
  • 1 cup jasmine rice
  • 1 cup jasmine rice
  • 2 cooked rice

    1. In a medium pot over high heat, add oil and sauté mirepoix for 4 minutes. Add chicken and brown for an additional minute.
    2. Add applesauce, Masala Simmer Sauce, and tomato. Bring to a boil and simmer for 5 minutes. Meanwhile prepare frozen rice according to package instructions (3 minutes in microwave).
    3. Take out ½ cup of soup and slowly stir into yogurt (this will temper the yogurt) and then add mixture back into soup, stirring well. This soup is meant to be thick, but if you’d like it thinner, add water or broth.
    4. Place a scoop of rice in each bowl, add soup, and top with a little more rice.
