    This was pretty good. I used a bit more chili powder and lime juice, and added more tomatoes than the recipe called for, just for extra color and flavor. Next time, I’ll add some onion, grilled chicken, and maybe some black beans to elevate it to a full meal.

    It was really good! I bought avocado oil before I realized it would taste exactly the same with olive oil and I just cut up regular tomatoes.

    This is a BANGER!! I added a whole lime, and had to use mozzarella because there wasn’t any quest fresco in the stores near me. I’m sure it’ll taste even better with it. So glad I tried this recipe.

    Good! I used goat cheese instead of queso as it’s what I had on hand, and added guacamole.

    Delicious! I baked my corn with a little oil and salt for about 2 hrs at 325°F. I also added avocado instead of tomatoes and added a little extra lime juice. I would totally recommend this!

    This reminds me of the crab salad that I made and it was Delicious . In fact it was sooo Gooood that I made it two weeks in a row. Thank you Yummly you make my day

    Loved it! I also added some grilled red and green peppers and used far less jalapeño then it calls for because I don’t like spicy. Grilled the fresh corn plain and it still had so much sweetness and flavor! The next day I added some grilled chicken and had it for lunch- super yummy! Will definitely make again. (Also omitted the oil because I didn’t have any and it definitely didn’t seem like it was missing it.)

    Fantastic. I used frozen corn and just browned it in a skillet with avocado oil, sat & pepper, and I added some cumin and a handful of shredded cabbage to the end product. Turned out great. Really cool idea to turn the eloté into a salad.

    Amazingly simple and refreshing salad! I love anything cilantro and lime.... i grilled my corn on the cob and that did it! It gave it a smoky taste and the addition of fresh cilantro and queso fresco made it pop. Loved it... a keeper for me. (I did skip the jalapeños for the kiddos sake).....

    very yummy, i substituted the olive oil for mayonnaise and used the Trader Joe’s Chili Lime seasoning in place of the lime juice and chili powder and it was delicious
