  • 1/4 cup cilantro (packed)
  • 6 ounces tomato paste
  • 1 teaspoon guajillo chili powder
  • 1 teaspoon chili powder (New Mexico)
  • 1 aleppo (teaspon, flakes)
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 jalapeno peppers (1 1/2 roasted, 1/2 raw)
  • 2 zucchini
  • 2 zucchini squash
  • 2 tablespoons old bay seasoning
  • 1 tablespoon grapeseed oil
  • 1 avocado
  • 1/2 cup plain greek yogurt (fat-free)

    Directions

    1. Begin by roasting the jalapenos in a 325 degree oven for 20 minutes.
    2. Add the cilantro, jalapenos, tomato paste and spices to the food processor and pulse until fully incorporated.
    3. Place in a skillet and simmer for 3 or 4 minutes.
