  • 1/3 cup tomato paste
  • 1 1/4 cups white rice (Note 1)
  • 2 1/2 cups chicken broth (/stock, low sodium)
  • 400 grams corn kernels (drained, Note 2)
  • 400 grams black beans (drained, or other beans)
  • 1 capsicum (/bell pepper, diced)
  • 1 cup green onions (/shallots)
  • 2 cups cheese (shredded, anything that melts! Note 3)
  • 1/2 teaspoon cayenne pepper (Note 4)

    Love this easy recipe! It is tasty and spicy! Great served with cornbread. We warmed flour tortillas and rolled leftovers in these and we all liked it! Would serve with tortillas anytime. Thanks for sharing this recipe!

    It was really good I just had to add a lot more seasoning to suit our tastebuds. I also added rotes tomatoes with extra green chili’s for extra flavor.

    I’ve made this twice now. First time with beef mince and second time with quorn mince. Both turned out to be delicious and my husband and daughter loved them. I don’t use onion powder in mine and only half teaspoon of salt rather than the full amount in the recipe. We all preferred the flavour with the quorn mince tho. Makes absolutely loads; much more than the 4 servings it mentions on the recipe. I would say 6-8 portions depending on appetite and is very filling.
