  • 3 tablespoons promise buttery spread
  • 1 zucchini (small, diced (about 1 cup))
  • 1/2 cup red bell pepper (diced)
  • 1 clove garlic (finely chopped)
  • 1/2 teaspoon dried thyme leaves, crushed
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 8 ounces orzo pasta (cooked and drained)
  • 1/4 cup grated Parmesan cheese

    Directions

    1. Melt 2 tablespoons Promise® Buttery Spread in 12-inch skillet over medium heat and cook zucchini, red pepper, garlic, thyme, salt and black pepper, stirring occasionally, 3 minutes or until vegetables are tender. To serve, toss hot orzo with vegetables, remaining 1 tablespoon Spread and cheese.
