Made my quinoa slightly differently than the recipe recommended (chicken broth instead of water), but overall, this was really an incredible combination. I had this three days in a row and never got sick of it. So good and easy to make!

Delicious!!! I added extra lime without salt and pepper, and it was STILL delicious. Recommend toasting the quinoa first for extra flavor!

Um, this is fan-frickin-tastic! I wanted something high in protein (I'm a vegetarian) and fiber for work lunches. I prepared it all on a Sunday and stored each item in a separate container so I could assemble it at work. I mixed the olive oil and lime with salt and pepper ahead of time and put it in a container and then drizzled it over the assembled bowl. It's so good I might go back for seconds. Seriously delicious!
