  • 1 1/2 pounds potatoes (scrubbed and cut into small chunks)
  • 1 pint cherry tomatoes
  • 10 ounces roasted red peppers, drained (and sliced)
  • 1/4 cup capers (drained)
  • 8 cloves garlic (peeled and crushed)
  • 5 sprigs fresh oregano (or 1 teaspoon dried oregano)
  • 3 tablespoons chopped parsley (finely, optional)

    Delicious! We loved everything about this. Very easy prep. We ate this with focaccia bread and used the bread to soak up the pan sauce.

    Oh my gosh this was the most delicious dinner with chicken that I’ve had in a long time my entire family loved it! We had it the next night as well they wanted it again! What is a wonderful recipe so easy to make we’re going to have it again next weekend!

    This recipe is so easy, and sooo delicious. I use a cast iron to brown my chicken, then transfer to a 13x9 and fill in with the veggie because it does not all fit in the cast iron. I do cut up potatoes and a cut a sweet potato mixed in. So good.

    So it turned out pretty great, my son actually loves it and he’s a picky eater for a two-year-old. I added a couple my own seasonings just to make it a little spicy. And instead of using thighs are use drumsticks and it still turned out great

    This is an easy and delicious meal. I bought boneless and skinless thighs. Then I got worried after reading through the recipe that my chicken would dry out. So I roasted potatoes for 30 minutes then added chicken and other ingredients. Drizzled olive oil over everything and roasted another 30 minutes. It turned out great. Will definitely make again.

    Great. Added some butter to oil to brown chicken. Used basil in place of oregano. Only took 30 minutes in oven.

    some challenges for me to brown chicken in roasting pan on my glass top stove but recipe was delicious and simple otherwise

    good add oregano, paprika, and poultry seasoning to thighs before searing. Add olives and add 3/4 cup chicken stock or white wine also to roasting pan with rest of the ingredients. Don't overdo the olive oil!!
    Wonderful! I loved the fine taste of it. I used green olives instead of capers and it was fine. I loved the os so rich Mediterranean taste
