  • 1 1/2 pounds boneless skinless chicken breast (cut into bite size pieces)
  • 1 tablespoon seasoning (chicken)
  • 2 1/2 teaspoons margarine (stick)
  • 2 1/2 teaspoons flour (all-purpose)
  • 2 cups chedder cheese (shredded sharp, divided)

    My husband loved it! I substituted fresh spinach as I didn't have cauliflower rice. Also used the others suggestions of adding Paprika & using Cajun seasoning.

    I have made this dish a couple times now. Very tasty. I use fresh cauliflower and I add some garlic and a touch of Cajun seasoning to the chicken. The kids like it too.

    You really don’t know that you are eating low carb. It’s a full flavored meal. I added Cajun seasoning instead of the chicken seasoning and it kicks the flavor up even more!

    it was really good. didnt use the milk or flour. instead I used heavy cream and cream cheese. also added spinach and sprinkled some pork dust over the top. i have to say it was pretty yummy

    Turned out great although I wish I'd have used fresh chopped cauliflower instead of previously frozen- made it a bit watery I also combined regular cheeses with fat free and added sautéed onions and garlic to the chicken with some red pepper flakes. gave it a nice kick!
