Lime Shrimp/jasmine Rice Soup

  • 1 bag shrimp (frozen, fresh would also be a great option)
  • 6 cups lemongrass (Organic Imagine, and corn broth, I used an)
  • 3 cups water
  • 1 yellow onion (chopped up)
  • 1/2 garlic (a clove of, chopped up)
  • 2 cups jasmine rice
  • 1 can bamboo shoots
  • 2 stalks chives (chopped up)
  • 5 limes (I used 5)
  • 2 tablespoons lemon juice
  • 1 pinch sea salt (can modified based on your preference)
  • 1 pinch black pepper
  • 1 pinch garlic salt
  • 1 pinch red pepper

    Directions

    1. Bring water to a boil and add the broth.
    2. Cut up the onions, garlic, chives, limes, and lemon juice and add them to the boiling water for 20 minutes (or so).
    3. At this point I tested the mixture and found it to be very "limey" that was very overpowering.
