  • 400 grams yellow onions (diced, 3 large)
  • 400 grams leeks (chopped, white and light green parts only, 2 leeks)
  • 1 tablespoon minced garlic (2 large cloves)
  • 1 tablespoon salt
  • 1 1/2 teaspoons ground black pepper (freshly)
  • 1 tablespoon fresh thyme leaves (minced)
  • 300 grams diced celery (medium, 8 sticks)
  • 300 grams carrots (medium diced, 4 to 6 carrots)
  • 1 teaspoon ground cumin
  • 3.3 liters homemade chicken stock (recipe follows, or from a stock cube)

  • 30 milliliters dry red wine (or red wine vinegar)
