I used quinoa instead of rice and only half of the chicken. My version was only 260 calories per serving and served 3. Lemon was the main flavor and it's basically just the raw sour flavor of it, so if you like Trout Meunière, you'd love this.

Wasn’t sure what to expect, but it had a lot of flavor and was very light. Used zucchini instead of spinach and served over rice.

very enjoyable, deserves a 4,5 rating. I didnt change a thing. Rarely do you find such a healthy recipe that tastes so good. we love lemon and would even consider using a bit more zest. I did half this recipe,every ingredient, and came out perfect. As another reviewer mentioned, have everything prepped and the rice cooking before you start this dish. Dont over cook the chicken

I made this with just one chicken breast for a little over one serving. I didn't have fresh basil so I had to use dried but it still turned out great. It's a tasty, quick and easy dinner.

My 9 year old son helped me make this and it turned out really well! I added zucchini which he was not happy about, but he ended up actually eating and liking it because the zucchini sucked up some lemon juice!

Made this last night and it was delicious and easy. Probably used more than 2 tbsp of lemon juice because I used the entire lemon (but I personally can never have too much lemon.). Be careful not to overcook the chicken..... I was not organized and new recipe so it got a bit overdone. Next time I will have all ingredients prepped and the rice going before starting any cooking because nothing in takes very long. I served with jasmine rice, probably not as healthy a choice as brown rice, but it was so tasty with the basil and lemon flavors. I will definitely make this recipe again.
