Lamb & Apricot Pilaf

  • 1 1/2 cups bulgur wheat
  • 1 cup dried apricots
  • 1 bunch green onions (trimmed and sliced)
  • 1/3 cup pine nuts
  • 3 tablespoons oil
  • 1/2 teaspoon ground cumin
  • 1/4 cup honey
  • 1 teaspoon ground coriander
  • 2/3 cup lamb stock (or beef stock)
  • 1 pound leg of lamb (boneless, sliced)
  • 1/2 teaspoon paprika
  • 2 tablespoons chopped cilantro

    Directions

    1. Cover bulgur wheat with boiling water and let stand for 30 mins. Drain and toss with 1 tsp salt.
    2. Heat 2 tbsp of the oil in a medium saucepan on medium heat. Cook apricots, onions and pine nuts for 3-4 mins, stirring, until golden. Add cumin, honey, 1/2 tsp of the ground coriander, stock and bulgur wheat. Cover and cook for 3 mins.
    3. Toss lamb with paprika, remaining 1/2 tsp ground coriander and salt and pepper. Heat remaining 1 tbsp oil in large skillet on high heat. Cook lamb for 5-8 mins, turning once, until cooked to desired doneness. Add bulgur wheat mixture and cilantro and toss to combine.
