Asian persuasion with a lacquered salmon set on a bed of robust quinoa and peas. Zesty flavors from the orange juice and grated ginger marinate into the flakey salmon. Powdered sugar cuts through the saltiness of the soy sauce and creates a glossy sauce. Mirin is a specific alcohol comparable to sake, and can be found in most international grocery stores; however, generic sake will work just fine.   • 120 milliliters soy sauce
  • 2 tablespoons powdered sugar
  • 90 milliliters mirin (or sake from Asian groceries)

    Directions

    1. Heat all the ingredients (except the salmon) in a saucepan until the mixture boils. Lower heat for 10 minutes until the mixture becomes thicker.
    2. Preheat oven to 180 degrees Celsius.
    3. Cook salmon fillets for 10 minutes, sprinkle with the marinade, and cook for an extra 10 minutes, basting regularly.
    4. Sprinkle with sesame seeds before serving.
    5. Serve with green vegetables mixed with quinoa.
