  • 1 1/2 tablespoons paprika
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoons mixed spice
  • 3/4 teaspoon ground allspice
  • 60 grams brown sugar
  • 3 tablespoons honey
  • 1 1/2 jalapeño chillies (fresh green, chopped, or any fresh green chilli)
  • 1 chilli (red bird's-eye, chopped)
  • 1 red onion (large, peeled and chopped)
  • 4 spring onions (trimmed and chopped)

  • 8 boned chicken thighs (large, skin on)
  • 3 tablespoons lime juice
  • 2 teaspoons palm sugar
  • 20 grams ginger (peeled and julienned)
  • 1 tablespoon oil (groundnut)
  • 1 cucumber (small, or ⅓ normal cucumber, shaved into very thin 4cm x 2cm strips, I use a vegetable peeler to achieve this effect)
  • 75 grams coconut (coarsely grated fresh, ie, from around ½ coconut)
  • 10 grams coriander (chopped)
  • 1/2 green chilli (finely chopped)
  • 400 grams purple sprouting broccoli (washed and trimmed)
  • 220 grams french beans (trimmed)

  • 200 grams edamame beans (frozen podded)
  • 2 tablespoons olive oil
  • 1 onion (medium, peeled and finely diced)
  • 2 1/2 teaspoons black mustard seeds
  • 30 fresh curry leaves (or 40, if using freeze-dried)
  • 3 whole dried chillies (or fewer, depending on how hot they are)
  • 1 lime (plus 1 tbsp lime juice)
  • 5 grams coriander leaves (picked)
  • 35 grams coconut (coarsely grated fresh, optional)
