  • 8 cups cabbage (thinly sliced)
  • 1 cup carrots (shredded)
  • 1 purple onion (thinly sliced)
  • 1 cup radishes (chopped)
  • 1/2 habanero pepper (seeded and very finely diced)
  • 3 cloves garlic (minced)
  • 1/2 cup fresh cilantro (chopped)
  • 1/4 cup cider vinegar
  • 4 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1/2 juice (lime)
  • 2 tablespoons jerk seasoning

    Directions

    1. Combine cabbage, carrots, onion, radishes, habanero, garlic and cilantro in a large bowl. Set aside.
    2. Dissolve brown sugar into cider vinegar and olive oil.
    3. Pour liquid mixture over the vegetables and toss to coat.
    4. Squeeze in lime juice and add the dry jerk seasoning.

    Very tasty and easy! The only thing I didn’t use was the habanero. This is now my go to salad! Highly recommend!
