  • 1 pound sweet italian sausag links, cut into
  • 2 zucchini (small, thinly sliced)
  • 1 eggplant (small, thinly sliced)
  • 1/2 teaspoon garlic powder
  • 4 ounces pimentos (1 jar, sliced, drained)
  • 2 tablespoons grated Parmesan cheese
  • 1 Italian bread (round loaf, or French bread, 10" diameter, split and toasted)
  • 14 ounces pizza sauce (1 jar, Ragu® Quick)
  • 1 cup provolone cheese (or mozzarella cheese, about 4 oz.)

    Directions

    1. Preheat oven to 425°. In 12-inch nonstick skillet, heat olive oil over medium-high heat and cook sausage until thoroughly cooked. Add zucchini, eggplant and garlic powder. Cook, stirring occasionally, until vegetables are almost tender; drain.
    2. In medium bowl, combine pimientos, Parmesan cheese and sausage mixture; set aside.
    3. Arrange bread on ungreased baking sheets. Evenly top with Sauce, sausage mixture and provolone cheese. Bake 13 minutes or until heated through.
