This was really good! Comfort food on a cold winter day. I used Canadian cheddar instead of Irish cheese because that is what I had on hand.

Even my cabbage-hating boyfriend loved it! :) He had two bowl-fulls! I was randomly checking out the St. Patty's recipes when I came across colcannon. I'd never had it before so I didn't modify the recipe any. Everybody loved it, self included! I'll be making it every year now.

I think this is my new "mashed potatoe" recipe. I never want regular mashed potatoes again. I added a few slices of bacon with the onions.

I have made this recipe and added garlic and sour cream and cooked the cabbage with the potatoes.; I also added some bacon bits. Delicious! My daughter begs me to make this

Not a cheese eater, the rest of the recipe sounds good...this is the Irish version of the English bubble & squeak, Serve it with nicely browned sausages (NOT Italian or American breakfast sausage, look for real English style bangers)

I make aversion of it but I don't use cheese and I use any veg left over from my dinner of corned beef and cabbage which includes cabbage, onions, potatoes and carrots along with any loose pieces of corned beef. I love it.

Sorry, I never had colcannon made with cheese when I was in Ireland. The rest of the recipe looks great though and it is how I often make it. If one were to use cheese a fresh farmers cheese or cream cheese would be best, : )
