  • 2 cans black beans (14-ounce, rinsed and drained)
  • 1 can whole kernel corn, drained (15-ounce)
  • 1 can diced green chiles (4-ounce)
  • 1/2 cup quinoa (uncooked, 93 grams)
  • 2 cloves garlic (minced)
  • 1 white onion (medium, or 1 cup, peeled and diced)
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1 teaspoon sea salt (or to taste)
  • chopped fresh cilantro (diced avocado, diced red onion, shredded cheese, sour cream, tortilla strips/chips, squeeze of lime juice, optional)
