- Cook the Impossible™ Burger: Mix all the spices (1 Tbsp garlic powder, 1 Tbsp onion powder, 1 tsp oregano, 2 tsp dried thyme, 2 tsp rosemary, 2 tsp dried parsley) and combine with the Impossible™ Burger. Form into flat oval pieces. Heat a pan over medium-high heat and sear 2-3 minutes on each side.
- Make tzatziki sauce: Peel and finely dice the cucumber, mince the garlic and dill. Combine with yogurt and lemon juice. Whisk until well incorporated. Add the oil slowly until fully incorporated and emulsified. *Make it 100% plant-based with plant-based yogurt.
- Assemble the gyros: Slice the cherry tomatoes and ¼ of a red onion. Top each pita with Impossible Gyro Meat, cherry tomatoes, red onion, and tzatziki sauce.
- Serve, share, and enjoy: Makes three Impossible Gyros.

It was fantastic! I’ll definitely be making it again.
I did use a different tzatziki recipe that was sour cream based.
I was somehow able to read the directions and didn’t see pita ingredients, so I found a pita recipe. It made a great meal together. Thank god I can read!
Edit: the last part was due to a comment that’s now gone that rated this lowly because there wasn’t pita included in the recipe
