  • 1/2 cup celery (thinly sliced)
  • 1/4 cup cauliflower florets (tips, chopped)
  • 1/4 cup carrots (chopped)
  • 1/4 peppers (sport, thinly sliced)
  • 3/4 teaspoon dried oregano
  • 1/2 teaspoon minced garlic
  • 2 tablespoons white wine vinegar
  • 1/2 cup olive oil

    Directions

    1. Combine all vegetables in a bowl, then add garlic and oregano.
    2. Stir to distribute, then add vinegar and oil, stirring again.
    3. Cover and store in a cool place for 24-48 hours before using.
    4. Refrigerate if giardiniera will not be used right after initial sitting time.
