  • 1 lb. chicken breasts (cut up into 1 inch pieces)
  • oil (for frying)
  • 1 cup rice flour (160 grams**)
  • 1 pinch salt
  • black pepper
  • 1 egg (beaten, if you're intolerant to eggs you can use ¼ cup of milk substitute, dairy or non dairy)
  • 2 Tbsp. garlic (infused olive oil*, 30 ml)
  • 1 Tbsp. minced ginger (about 1 inch knob)
  • 1 tsp. sea salt
  • 3 Tbsp. honey (64 grams)
  • 1 tsp. rice vinegar (or apple cider vinegar, 5ml)
  • 1/2 Tbsp. coconut aminos (can sub with gluten free soy sauce, or tamari sauce)
  • 1/2 cup chicken stock (118 ml, can sub with water)
  • 1 tsp. arrowroot flour (or cornstarch optional - this thickens your sauce)
  • 2 cups cooked rice (if not strictly Paleo)
  • 1/4 cup spring onions (diced)

    Great! Served with whole grain pasta and shredded carrots that I cooked separately and put in pan with sauced chicken. Also added a tablespoon of orange marmalade to sweeten it up just a touch
