  • 3 chicken breasts (about 200g, 7oz each, chopped into bite-size chunks)
  • 2 chillies (red bird’s eye, roughly chopped)
  • 1 ginger (thumb-sized piece of, peeled and finely chopped)
  • 5 kaffir lime leaves (dried or fresh)
  • 1 lemongrass stalk (finely chopped, or 1 tsp lemongrass paste)
  • 4 shallots (peeled and chopped)
  • 2 cloves garlic (peeled and finely chopped)
  • 1 tsp. cumin
  • 1 tsp. ground coriander
  • 1/2 Tbsp. paprika
  • 1 yellow bell pepper (deseeded and sliced)

    Superb! I added a little water to help with blending up the chilli paste

    This was so nice! Didn't make any changes except to double the sugar snaps, and cut out the yellow pepper. I did thicken it at the end and used lemongrass and ginger pastes out of laziness, and kept the heat down by cutting out one of the chillies. Very easy to make and will be doing it again tho I think next time a few handfuls of fresh spinach and some green beans would improve it even more!

    Really nice, though I do use full fat coconut milk
