  • 3 chicken breasts (chopped into chunks)
  • 1 tablespoon cornflour
  • 1 pinch salt (and pepper)
  • 3 tablespoons oil
  • 1 onion (peeled and chopped into wedges)
  • 1 red pepper (chopped into chunks)
  • 432 grams pineapple (can of chopped, in juice)
  • 2 cloves garlic (peeled and minced)
  • 1 ginger (x 1” cube, peeled and grated)
  • 2 tablespoons soft brown sugar
  • 3 tablespoons soy sauce (use tamari for gluten free)
  • 1 tablespoon tomato puree (usually gluten free, but best to check)

    pretty tasty. i used fresh pineapple and soaked it to make juice. i wasnt to sure of the ratio but maybe i needed a little more brown sugar to make a thicker glaze. would make again

    really tasty! would definetly recomend! my advice would be to prep everything before you start cooking, makes it really easy and the cook itself only takes 15/20 minutes.

    Mmmmm this was extremely delicious even 2 year old loved it but I used cooked chicken stripes instead of chicken breast but can definitely see this being a family favourite

    Unfortunately the kids turned their nose up at this. Perhaps next time. Hubby and I certainly enjoyed it enough to make again. I used a tablespoon of honey instead of sugar.
