  • 27 ounces green chilis (Hatch Whole)
  • 30 ounces Hatch Green Chili Enchilada Sauce
  • 15 ounces tomatoes (diced with no salt added)
  • 3 cups cooked chicken (shredded or diced)
  • 2 cups monterey jack cheese (shredded)
  • 8 corn tortillas (eachs Yellow)
  • 1 onion (chopped)
  • 2 cups water
  • sour cream
  • avocado
  • 9 cooking spray (x13 Casserole Dish, sprayed with, for easy clean-up)

    1. Preheat Oven to 400 degrees
    2. Combine green chili sauce, water, tomatoes, onion and chicken in a large pot.

    I was very pleased with the end result! Added a couple of my own tweeks to the recipe. I substituted 1 cup of chicken broth for 1 cup of water. Added a dash cumin to the combined mixture. Also started with a layer of corn tortillas and then used a mixture of Monterey Jack and cheddar cheese. Will definitely make this dish again!!
